Stuffed Tomatoes

DESCRIPTION

These were part of the multi-course feast that Alma and Alisa cooked for Randy and James, but you can enjoy them as a simple side dish or even a light lunch.


YIELD

8 servings


INGREDIENTS

1 lb ground chicken
1/3 lb strong cheese (blue, cheddar)
1/4 cup chopped onion
1/2 cup grated mozzarella
8 tomatoes
Good handful of chopped basil
2 cloves garlic, chopped


DIRECTIONS

1. Saute chicken, onions, and garlic until chicken is nearly well done. Stir in strong cheese and basil.
2. Core tomatoes and hollow as much as possible without penetrating outer skin.
3. Spoon chicken mixture into each tomato, top with mozzarella and bake in 375 degree oven until cheese browns on top. Serve hot or cold.
