Slow-Roasted Turkey Breast & Smoked Bacon

DESCRIPTION

For those occasions when a small but lavish holiday feast is in order, this slow-roasted turkey with savoury herbs and smoked bacon should fit the bill nicely.


YIELD

2 servings


INGREDIENTS

1 turkey breast (skin on)
4 strips smoked bacon
1 tbsp oil
2 tbsp butter
1 sprig fresh rosemary, roughly chopped
2 sprigs fresh thyme, roughly chopped
2 sprigs fresh sage, roughly chopped
Salt and pepper to taste


DIRECTIONS

1. Preheat over to 350 degrees.
2. Season the turkey breast with salt and pepper. Add olive oil to a cast iron skillet and sear turkey over medium heat until golden brown (about 3 – 4 minutes), beginning with the skin side. Add butter, chopped rosemary, thyme and sage.
3. Remove turkey to a small roasting pan. Drape the bacon slices over the top of the turkey.
4. Roast the turkey breast in the oven until the bacon is crispy and the juices from the turkey run clear (about 30-35 minutes).
5. Allow the turkey to rest in a warm place for 5–10 minutes, then slice and serve with the crispy bacon.
