Cranberries with Blackberry Port

DESCRIPTION

This delicious cranberry sauce is great for any holiday meal. Make it ahead of time and refrigerate. Substitute regular port with locally made blackberry port or dessert wine. I would highly recommend the ones from Saltspring Island or Saanich BC.


YIELD

3 cups


INGREDIENTS

1 cup blackberry port
1 cup sugar or 3/4 cup local honey
12 oz. fresh cranberries


DIRECTIONS

In a medium saucepan, combine port, sugar/honey and cranberries. Bring to a boil over medium heat, stirring occasionally. Lower heat and cook until liquid reaches a syrupy consistency, about 20 minutes.

Remove from heat, pour into a serving dish and cool to room temperature before serving.
