Coq au Vin

DESCRIPTION

This was the cornerstone of the lavish meal Alma and Alisa prepared for Randy and James. Coq au vin means, literally, "rooster in wine". Traditionally, older roosters are used because they contain more connective tissue than younger chickens, resulting in a richer broth, but any good-quality chicken will yield excellent results.


YIELD

6 servings


INGREDIENTS

6 bone-in chicken breasts (skin and excess fat removed)
1 lb mushrooms (halved or quartered if large)
1 lb small onions
1 cup cup red wine
6 thick-cut slabs of bacon
3 tbsp cold butter


DIRECTIONS

1. Fry bacon until crisp and set aside.
2. Brown chicken breasts in bacon fat. Add to pot with mushrooms, onions and red wine. Bring to a boil and reduce heat to slow simmer until chicken cooked through. Remove chicken, mushrooms and onions and set aside.
3. Reduce red wine by half on high heat. Remove from heat and stir in butter. Add chicken, mushrooms and onions. Serve at once.
