A strata is a great way to use up any slightly stale homemade bread that you're reluctant to throw out, along with those odds and ends of local cheeses hanging out in your fridge. Prepare this easy dish the night before, and bake it in the morning. Or bake it the night before and serve cold, similar to a frittata.
4 generous servings
2 tablespoons (30 mL) butter, melted
1 onion, thinly sliced
6-8 thick slices of bread
1/2 cup (125 mL) shredded cheese, your choice
4 eggs
1 1/2 cups (375 mL) milk
Salt
1 zucchini, thinly sliced
1. In a pan, melt 1 tablespoon of the butter over medium-high heat. Add onions, reduce heat, and cook slowly until very tender, but not caramelized, about 10 minutes. Set aside.
2. Whisk together eggs and milk in a large bowl. Add cheese and salt.
3. Stir in bread until uniformly coated with egg mixture. Add onions. If possible, cover and let sit in refrigerator for several hours or overnight.
4. Preheat oven to 350 degrees.
5. Pour mixture into oiled casserole dish. Bake, uncovered, for 15 minutes.
6. Remove from oven, cover in a layer zucchini slices, and brush top with 1 tablespoon of melted butter.
7. Return to oven and bake for another 2o minutes.
8. Turn oven to broil, and bake for 2-3 more minutes, until zucchini layer starts to become slightly crispy.
9. Remove from oven and allow to set for 5-10 minutes before serving.
